What time should I make dinner reservations?

We LOVE-LOVE-LOVE Emeril's in Vegas. You might have to eat slowly to catch the sunset at 8:00 in July. Check www.weather.com for sunset times in Vegas during your trip. I personally prefer to see the fountains in complete darkness, so I'd make the reservation for 8:30 at Mom Ami.
